The first difference you see is that french vanilla is yellow
while the regular vanilla is white in color. Furthermore, the
texture is different. Normal vanilla is smooth and fine, while
the french vanilla is thicker and creamier.
The difference between vanilla and french vanilla is due to
how it is made. The vanilla is made from milk or cream. While
french vanilla also has those ingredients, it also
has yolk. You guess it. French vanilla is made from custard which
is a cream and egg yolk mix, while regular vanilla has no egg yolk.
Besides the yolk, most vanilla and french vanilla ice cream recipes
also include sugar and vanilla beans.
We took a survey here in the Research Maniacs office, and the majority
think the regular vanilla ice cream is better than then fuffu french
vanilla ice cream.
